Tanzanian Sugarcane Juice — freshly pressed sugarcane juice with lime, a pinch of ginger, and crushed ice. The most refreshing drink in Tanzania — naturally sweet, slightly grassy, and absolutely irreplaceable when drunk freshly pressed at a roadside vendor.
Fresh sugarcane juice is the drink that stops Tanzanians at every market — the vendor's press extracting the sweet juice from the cane in front of you, poured over ice with a squeeze of lime. It cannot be bottled or preserved — it must be drunk within minutes of pressing. This immediacy is part of its magic.
Ingredients
Equipment: Sugarcane press (ideal) — or blender + fine cloth as substitute
- 6—8 fresh sugarcane stalks (about 30cm sections) — peeled
- 1 lime — juice
- ½ tsp fresh ginger — grated (optional)
- Crushed ice
Method
- Peel sugarcane.
- Press method: feed through the press. Collect juice.
- Blender method: chop cane finely. Blend with ½ cup water. Strain through muslin cloth, squeezing thoroughly.
- Add lime juice and ginger.
- Serve immediately over crushed ice.
- Drink within 20—30 minutes — juice oxidises quickly.

The Science
Fresh sugarcane juice contains polyphenol oxidase — the same enzyme that causes apple browning. Within 30 minutes of pressing, this enzyme oxidises phenolic compounds in the juice, producing off-flavours and darkening. Lime juice's citric acid partially inhibits polyphenol oxidase, extending the window of freshness slightly.
