The Hehe beef stew is simpler and heartier than coastal preparations — the highland cooks of Iringa relied on beef from their cattle herds and potatoes from the cool highlands, simmered together with minimal spicing until the beef was falling-tender and the potatoes had absorbed the rich bone broth.

The Hehe (Wahehe) of the Iringa highlands are one of Tanzania's most historically significant peoples — under Chief Mkwawa they successfully resisted German colonial forces from 1891 to 1898 in the most prolonged armed resistance to colonialism in East African history. The highland climate of Iringa (the Great Uhehe plateau at 1500—1800m elevation) produces excellent potatoes, vegetables, and cattle. The Hehe beef and potato stew reflects their highland environment — hearty, warming, and built for a people who lived at altitude.
Ingredients
Equipment: Large heavy pot
- 800g beef — bone-in pieces
- 500g highland potatoes — peeled and quartered
- 2 onions — diced
- 3 tomatoes — diced
- 2 tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- 3 cups water
- Fresh coriander or parsley
Method
- Brown beef pieces in oil. Remove.
- Cook onions until golden in the same pot.
- Add tomatoes. Cook 5 minutes.
- Return beef. Add water and salt.
- Simmer covered on very low heat for 45 minutes.
- Add potatoes. Simmer 20 more minutes until potatoes are completely tender.
- Season with black pepper. Garnish.

- The simplicity is intentional — Hehe cooking is not heavily spiced.
- Highland potatoes from Iringa hold their shape better than lowland varieties.
- Bone-in beef is essential for the broth depth.
