Ingredients

Equipment: Large pot

  • 600g beef — cubed
  • 400g potatoes — peeled and cubed
  • 2 onions — diced
  • 4 tomatoes — diced
  • 4 garlic cloves
  • 1 tbsp ginger
  • 3 tbsp oil
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tsp salt
  • 2 cups water
  • ¼ cup coriander

Method

  1. Brown beef. Remove.
  2. Cook onions until golden. Add garlic, ginger, spices.
  3. Add tomatoes. Cook 8 minutes.
  4. Return beef. Add water. Simmer 35 minutes.
  5. Add potatoes. Simmer 20—25 more minutes until potatoes are tender.
  6. The potatoes naturally thicken the sauce.
  7. Garnish with coriander.
