Gogo Sorghum Milk Porridge — sorghum flour cooked into a smooth porridge and enriched with milk and honey in the Gogo tradition. The fortified breakfast of the dry Dodoma plateau — when sorghum is supplemented with cattle milk, it becomes one of Tanzania's most nutritionally complete traditional breakfasts.
In the Gogo tradition, cattle milk is the supplement that transforms the sorghum breakfast from a simple grain porridge into a complete, high-protein meal. During the dry season when milk is available from cattle, the Gogo enrich their morning sorghum with fresh milk — combining the mineral richness of sorghum with the calcium and protein of milk.
Ingredients
Equipment: Saucepan, Whisk
- 1 cup sorghum flour
- 2 cups water
- 1 cup fresh milk
- 2 tbsp honey
- Pinch of salt
Method
- Whisk sorghum flour with ½ cup cold water until smooth.
- Bring remaining water to a simmer.
- Add flour paste slowly, whisking constantly.
- Cook 15 minutes, stirring regularly.
- Add milk. Stir. Heat gently — do not boil after adding milk.
- Add honey and salt.
- Serve warm.
