Sukuma fish soup is the dish that has fed the people around Lake Victoria for millennia — the fresh fish of the lake prepared with minimal intervention to let the quality speak. The Sukuma traditionally added very few spices, relying instead on the extraordinary freshness of the lake fish.
Ingredients
Equipment: Large pot
- 800g whole tilapia or Nile perch — cleaned and gutted
- 2 onions — roughly chopped
- 4 tomatoes — diced
- 3 garlic cloves
- 3 cups water
- 1 tsp salt
- ¼ cup fresh coriander
- Fresh lemon wedges
Method
- Combine fish, onion, garlic, and water in a pot.
- Bring to a boil. Skim foam.
- Reduce heat. Add tomatoes.
- Simmer gently 25 minutes.
- Remove fish. Flake gently. Return to broth.
- Season. Garnish with coriander. Serve with lemon.
