2. Millet Ugali (TZA244) — dark grey, dense, nutty
3. Sorghum Ugali (TZA246 method) — brown, slightly sour
4. Cassava Ugali — pure white, very dense
5. Sweet Potato Ugali (TZA276) — orange, slightly sweet
- 2 cups each of: maize flour, finger millet flour, sorghum flour, cassava flour
- 1 kg sweet potatoes — boiled
Method
- Prepare each ugali separately using the method from its individual recipe.
- Maize ugali: TZA001 method.
- Millet ugali: TZA244 method.
- Sorghum ugali: same method as millet.
- Cassava ugali: boil cassava, mash with minimal water until stiff.
- Sweet potato ugali: TZA276 method.
- Arrange all five side by side.
