Makonde Cassava Bread — cassava flour mixed with water and a little coconut milk, formed into flat rounds and pan-fried in the Makonde tradition. Naturally gluten-free, slightly chewy, and deeply satisfying — the daily bread of southern Tanzania's cassava country.
Makonde cassava bread is the staple bread of Mtwara — where cassava is the dominant crop, cassava flour is also the primary flour. This simple pan-fried bread is made daily from the same cassava that goes into the stew, reflecting the Makonde's complete dependency on and mastery of this single crop.
Ingredients
Equipment: Bowl, Wide pan
- 2 cups cassava flour
- 1 cup warm water
- 3 tbsp coconut milk
- ½ tsp salt
Method
- Mix cassava flour, coconut milk, and salt.
- Add warm water gradually, mixing until a soft but not sticky dough forms.
- Divide into 8 balls. Flatten each into a round 1cm thick.
- Heat a dry pan over medium heat.
- Cook each round 4—5 minutes per side until golden and cooked through.
- Serve warm.

- Cassava dough is naturally gluten-free — do not expect it to behave like wheat dough.
- It will not puff up like chapati — it stays flat and dense.

- Expecting it to rise or puff — it will not.
The Science
Cassava flour contains no gluten — when formed into dough, the binding comes from cassava starch gelatinisation (heated cassava starch absorbs water and becomes tacky). The coconut milk fat helps produce a more tender, less brittle result.
