The Makonde (Wamakonde) people of southern Tanzania's Mtwara region are world-famous for their intricate ebony wood carvings — considered among the finest sculptural traditions in Africa. Their homeland, the Makonde Plateau, is semi-arid and cassava grows better than any other crop here. Makonde cuisine is built around cassava in every form — fresh, dried, pounded — combined with beans and peanuts for protein. The Makonde cassava and bean stew is the daily meal of the plateau.
Ingredients
Equipment: Large pot
- 400g fresh cassava — peeled and cut into chunks
- 1.5 cups cooked kidney beans
- 3 tbsp groundnut paste
- 2 onions — diced
- 3 tomatoes — diced
- 2 tbsp oil
- 1.5 tsp salt
- 2 cups water
Method
- Heat oil. Cook onions until golden.
- Add tomatoes. Cook 6 minutes until thick.
- Add cassava chunks and water.
- Cover and cook 20—25 minutes until cassava is completely tender.
- Add cooked beans.
- Mix groundnut paste with ½ cup warm water. Add to pot.
- Simmer 10 more minutes until sauce is thick and well-integrated.
- Season with salt.

- Cassava must be completely tender — test with a fork.
- The groundnut paste added near the end gives the Makonde version its distinctive richness.

- Under-cooking cassava.
- Adding groundnut paste too early — it scorches.
