Cassava cakes are the gluten-free breakfast of the Tanzanian coast — grated fresh cassava combined with coconut milk and a little sugar produces small, golden, naturally sweet cakes that are completely satisfying in the morning.
Ingredients
Equipment: Grater, Wide pan
- 400g fresh cassava — peeled and grated
- 100ml coconut milk
- 2 tbsp sugar
- ½ tsp ground cardamom
- Pinch of salt
- 2 tbsp desiccated coconut — optional
- Oil for pan-frying
Method
- Grate cassava finely. Squeeze out as much moisture as possible through a cloth.
- Combine grated cassava, coconut milk, sugar, cardamom, salt. Mix well.
- The mixture should hold together when pressed — add more coconut milk if too dry.
- Form into small patties 1cm thick.
- Pan-fry in oil over medium heat 4—5 minutes per side until golden.
- Serve warm.

- Squeezing out moisture is essential — wet cassava produces a heavy, dense cake.
- Press patties firmly — they must hold their shape.

- Not squeezing cassava.
- Patties that are too thick — raw inside.
The Science
Cassava contains linamarin which must be broken down — finely grating ruptures the cell walls, releasing linamarase enzyme which catalyses linamarin breakdown. The subsequent cooking completes the process. The starch in cassava gelatinises during pan-frying, binding the patty into a cohesive structure.
