Ingredients

    Zanzibar Spiced Beef Patties

    • 600g minced beef (80/20 fat ratio)
    • 1 tsp ground cumin
    • ½ tsp ground cardamom
    • ¼ tsp ground cloves
    • ¼ tsp ground cinnamon
    • 1 tsp paprika
    • 1 garlic clove — grated
    • 1 tsp salt
    • ½ tsp black pepper

    Build

    • 4 brioche buns — toasted
    • 4 slices aged cheddar or gouda
    • 1 ripe avocado — sliced

    Pili Pili Mayo: 4 tbsp mayo + 2 tbsp pili pili sauce

        Caramelised onions: 2 onions in 2 tbsp butter, 30 minutes low heat

        Method

        1. Caramelise onions: cook sliced onions in butter over very low heat for 30 minutes until deeply golden.
        2. Make pili pili mayo: stir together.
        3. Make patties: combine beef with all spices. Mix gently. Form into 4 patties (150g each). Press a dimple in the centre.
        4. Grill or pan-fry over high heat: 4 minutes one side. Flip. Place cheese on top. Cook 3—4 more minutes. Rest 3 minutes.
        5. Toast buns cut-side down in butter.
        6. Build: bottom bun → pili pili mayo → lettuce → patty with melted cheese → avocado slices → kachumbari → caramelised onions → top bun.

        Chef Tips

        • Do not press the patty while cooking — forces out the juices.
        • The dimple in the raw patty prevents doming during cooking.
