Zanzibar Chermoula

Method

  1. Blend all chermoula ingredients until smooth.
  2. Coat lamb chops generously in chermoula. Marinate 2 hours minimum.
  3. Make coconut mash: beat boiled potatoes with warm coconut milk, butter, salt, and white pepper until silky.
  4. Make tamarind reduction: simmer tamarind, honey, and water until slightly syrupy — 3—4 minutes.
  5. Grill chops over high heat: 3 minutes per side for medium rare. Rest 4 minutes.
  6. Plate: swoosh of coconut mash → 2 chops crossed elegantly → tamarind reduction drizzled → microgreens.
