Zanzibar Lamb Ribs — lamb ribs marinated in a Zanzibar spice paste of cloves, cardamom, cinnamon, and tamarind, slow-roasted over charcoal until the meat is falling off the bone and the exterior is magnificently caramelised. Zanzibar grilling at its most spectacular.
Zanzibar lamb ribs are the celebration grill — the lamb ribs marinated overnight in the island's spice paste and slow-roasted over charcoal. The cloves and cinnamon caramelise on the exterior while the meat becomes falling-tender within.
Ingredients
Equipment: Charcoal grill, Basting brush
- 1 rack lamb ribs — separated into individual ribs
Zanzibar Spice Paste
- 5 garlic cloves
- 2 tbsp ginger
- 2 tbsp tamarind paste
- 2 tbsp oil
- 1 tsp ground cloves
- 1 tsp ground cardamom
- 1 tsp ground cinnamon
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 2 tsp salt
Method
- Blend all spice paste ingredients to a smooth paste.
- Coat lamb ribs thoroughly. Marinate minimum 4 hours — overnight best.
- Prepare charcoal to medium coals.
- Grill over medium-low indirect heat 40—50 minutes, turning every 10—15 minutes.
- Move to direct heat last 10 minutes for the caramelised exterior.
- Rest 8 minutes. Serve.
