Beef Filling

  • 200g minced beef — browned with garlic, curry powder, pili pili, and coriander

  • 2 eggs — beaten
  • 1 cup fine breadcrumbs
  • ½ cup flour
  • Oil for deep frying

    Method

    1. Prepare ugali extra-stiff. Spread on a tray to cool completely — minimum 1 hour.
    2. Cook beef filling with spices until dry. Cool.
    3. With wet hands, take a golf-ball of cooled ugali. Flatten in palm.
    4. Place 1 tsp filling in centre. Fold and roll into a cylinder.
    5. Repeat. Refrigerate 30 minutes to firm.
    6. Coat: flour → egg → breadcrumbs. Press crumbs firmly.
    7. Heat oil to 175°C. Fry in batches 4—5 minutes until deep golden.
    8. Drain. Serve immediately.
