🫀 Ethiopian Beef Liver Wat

Ethiopian Gubet Wat — beef liver sliced and cooked quickly in kibbeh with onion, jalapeño, and berbere. The liver must be cooked quickly — over-cooked liver is rubbery. Done right, it is one of the most nutritious and most flavourful Ethiopian preparations.
Liver wat is the fastest Ethiopian main dish — the liver must be cooked quickly to remain tender. The kibbeh and berbere provide the Ethiopian character; the jalapeño provides freshness and heat. Served with injera, it is one of the most nutritionally dense meals possible.
Ingredients
Equipment: Heavy pan
- 500g beef or calf liver — sliced 1cm thick
- 2 tbsp kibbeh
- 1 onion — diced
- 2 jalapeños — sliced
- 2 garlic cloves
- 1 tsp berbere
- 1 tsp black pepper
- 1 tsp salt
Method
- Slice liver. Remove membrane and any tubes.
- Heat kibbeh until smoking hot.
- Sear liver in a single layer — 1.5 minutes per side only.
- Remove liver.
- In the same pan: cook onion 2 minutes. Add jalapeño, garlic, berbere.
- Return liver. Toss. Season. Serve immediately.
Chef Tips
- Liver is done at 1.5 minutes per side — over-cooking is the only mistake.
- Smoking hot pan is essential.
- Serve the instant it is done — waiting makes it tough.

The Science
Liver has very low fat content and high protein — it goes from tender to tough very quickly as the proteins denature. At 70°C internal temperature, the liver is perfectly cooked; at 80°C it becomes unpleasantly tough. The total cooking time from a hot pan to 70°C is approximately 3 minutes.
