Ethiopian Smoked Lake Fish — whole fish salted, spiced with berbere and garlic, and slowly smoked over fragrant wood until deeply flavoured and preserved. The traditional lake community preservation technique — smoked fish is used in stews, eaten as-is, and carried on long journeys.
Smoked fish is the preservation technique of Ethiopia's lake communities — when the catch is larger than can be eaten fresh, the fish is salted, spiced, and smoked. The smoking adds flavour complexity and extends the shelf life dramatically. Smoked fish is used in stews and eaten as a snack.
Ingredients
Equipment: Smoker or covered grill with indirect heat, Fish rack
- 1 kg whole fish — tilapia or catfish
- 2 tbsp coarse salt
- 1 tbsp berbere
- 1 tsp garlic powder
Wood for smoking: olive wood, acacia, or fruit wood
Method
- Clean fish. Score deeply.
- Rub salt, berbere, and garlic over all surfaces and into score marks.
- Rest 1 hour.
- Prepare smoker at 70—80°C (low temperature, cold smoke).
- Smoke fish for 6—8 hours, refuelling as needed.
- The fish is ready when deeply golden, firm, and fragrant.

- Low temperature — this is preservation smoking, not cooking smoking.
- The berbere adds complexity to the smoke flavour.
- Smoked fish keeps 2 weeks at room temperature in a dry place.
Common Mistakes to Avoid
- Too high temperature — cooks rather than smokes.
The Science
Cold smoking at 70—80°C produces volatile phenol compounds from the wood combustion — these phenols deposit on the fish surface and have antimicrobial properties, inhibiting bacterial and fungal growth. Combined with the salt's desiccating effect, they extend shelf life dramatically.
