Cabbage Alicha is the simplest Ethiopian vegetable dish — just cabbage, onion, oil, and a touch of turmeric. Its role on the platter is balance: where everything else has berbere or complexity, this provides pure, gentle simplicity.
Ingredients
Equipment: Large pan
- ½ head white cabbage — roughly chopped
- 1 onion — diced
- 2 garlic cloves
- ¼ tsp turmeric
- 2 tbsp oil
- 1 tsp salt
Method
- Heat oil. Cook onion until golden.
- Add garlic and turmeric. Stir 30 seconds.
- Add cabbage. Toss.
- Cook covered 12—15 minutes until tender.
- Season.

- The simplest possible preparation — do not add more.
