Ingredients
Equipment: Large pot
- 600g pumpkin — peeled and cubed
- 2 onions — diced
- 2 tomatoes — diced
- 3 garlic cloves
- 2 tbsp berbere
- 3 tbsp oil
- ½ cup water
- 2 tsp salt
Method
- Cook onions until golden.
- Add garlic and berbere. Fry 2 minutes.
- Add tomatoes. Cook 4 minutes.
- Add pumpkin. Stir to coat.
- Add water. Cover. Cook 20—22 minutes.
