Ethiopian Ayib with Herbs — freshly made ayib (ETH096) mixed with finely chopped green jalapeño, coriander, and spring onion. The herb-enriched version of the essential Ethiopian fresh cheese — more complex than plain ayib, this version serves as both a condiment and a standalone dip.
Ayib with herbs takes the plain fresh cheese of ETH096 and elevates it into a condiment of its own character — the green jalapeño provides mild heat, the coriander adds freshness, and the spring onion adds sharpness. Served in a larger mound on the celebration platter.
Ingredients
Equipment: Saucepan, Muslin cloth, Bowl
Fresh Ayib (make per ETH096)
- 2 litres whole milk
- 4 tbsp lemon juice
- Pinch of salt
Herb Mixture
- 2 green jalapeños — very finely diced
- ¼ cup fresh coriander — finely chopped
- 3 spring onions — finely sliced
- 1 tsp lemon zest
- Salt to taste
Method
- Make Ayib per ETH096.
- Drain for 1.5 hours until firm but still moist.
- Place in a bowl.
- Add finely diced jalapeño, coriander, spring onion, and lemon zest.
- Mix gently — do not over-mix or the texture becomes paste-like.
- Season with salt.
- Shape into a mound or serve in a ramekin.

- Mix gently — ayib should stay crumbly, not become a paste.
- The green jalapeño is milder than berbere — this is intentionally mild heat.
- Lemon zest brightens the herb flavours.
- Serve at room temperature — cold ayib loses its flavour.
