Ingredients
Equipment: Deep pan, Bowl for batter
- 4 ripe bananas — sliced into rounds
Light Batter
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp ground cardamom
- ¼ tsp cinnamon
- 1 tbsp sugar
- Pinch of salt
- ¾ cup water
- Oil for frying
- Honey for serving
Method
- Make batter: whisk flour, baking powder, cardamom, cinnamon, sugar, salt, and water until smooth.
- Heat oil to 175°C.
- Dip banana slices in batter. Coat completely.
- Fry in batches 2—3 minutes per side until golden.
- Drain. Drizzle with honey.
- Serve warm.

- Thin batter — it should just coat, not be thick.
