Ethiopian Passion Fruit Juice — fresh passion fruits halved, pulp strained and diluted with water, sweetened with honey. Ethiopia grows exceptional passion fruit in its highland areas — the concentrated aroma and intense flavour produce one of the world's finest fresh juices.
Ethiopian passion fruit grows in the highland areas around Jimma and in the Rift Valley gardens — the fruit is smaller than commercial varieties but more intensely flavoured. The fresh juice, strained and diluted, is one of the most aromatic drinks imaginable.
Ingredients
Equipment: Sieve, Bowl, Spoon
- 8 ripe passion fruits
- 2 cups cold water
- 2 tbsp honey
- Ice
Method
- Halve passion fruits. Scoop pulp and seeds into a sieve over a bowl.
- Press through the sieve — extracting as much juice as possible.
- Discard seeds (or reserve for garnish).
- Mix passion fruit juice with cold water and honey.
- Taste — adjust honey.
- Serve over ice.
Chef Tips
- Press firmly through the sieve — much of the juice is in the sacs around the seeds.
- Ethiopian passion fruit is very concentrated — needs more dilution than supermarket varieties.
Common Mistakes to Avoid
- Under-diluting — too intense to drink.
The Science
Passion fruit's distinctive aroma comes from over 100 volatile compounds including ethyl butanoate and ethyl hexanoate — these are present in extraordinary concentrations in Ethiopian highland varieties. The tartaric and citric acids produce the characteristic tartness.
