Suqaar is the Somali approach to fast meat cooking — the small cubes cook in minutes, the spices are aromatic rather than hot, and the result is a dish entirely different from highland Ethiopian cooking. It is served with rice or Somali canjeero (thin flatbread).

Heritage & Origin

Origin: Somali Region of Ethiopia — the Ogaden, home to Ethiopian Somali communities

The Somali Region (formerly Ogaden) is the eastern lowland area of Ethiopia bordering Somalia. The Ethiopian Somali community shares food culture with Somalia while having developed distinct regional variations. Suqaar is the quick-cooked diced meat dish of Somali cuisine — cubed beef or goat quickly sautéed with onion, tomato, sweet pepper, and Somali spice blend. It is significantly milder than Amhara wat but more aromatic from the cumin and coriander that dominate the Somali spice tradition.

Ingredients

Equipment: Wide pan

  • 500g beef or goat — cut into 1cm cubes
  • 1 onion — diced
  • 2 tomatoes — diced
  • 1 green sweet pepper — diced
  • 2 garlic cloves
  • 1 tsp cumin
  • ½ tsp coriander
  • ½ tsp turmeric
  • ¼ tsp cardamom
  • 2 tbsp oil
  • 1 tsp salt

Method

  1. Heat oil over high heat.
  2. Add meat cubes. Sear without stirring 2 minutes.
  3. Add onion. Cook 3 minutes.
  4. Add garlic, spices, tomatoes, and sweet pepper.
  5. Stir and cook 5—6 minutes until everything is combined and cooked through.
  6. Season.

Chef Tips

  • High heat and quick cooking — suqaar is not a slow stew.
  • Somali spice: cumin-coriander-cardamom, not berbere.

Common Mistakes to Avoid

  • Adding berbere — completely changes the character.
  • Slow cooking — suqaar is fast food.

The Science

The 1cm cube size is optimal for rapid cooking — small enough to cook through in 5—6 minutes at high heat while still retaining moisture within each cube.

Cultural Note

Ethiopian Somali Suqaar is the food that demonstrates how Ethiopia's eastern regions connect to the broader Horn of Africa food culture — the Somali spice tradition, the quick-cook technique, and the preference for rice over injera all speak to a cuisine shaped by the Indian Ocean trade routes.
