🍞 Tigrayan Himbasha

Tigrayan Himbasha — the round, decorated celebration bread of the Tigray region, pan-baked with nigella seeds and fenugreek. Distinct from Amhara Ambasha — the Tigrayan version uses nigella seeds (black cumin) as the signature spice, giving it a distinctive bitter-aromatic character.
Tigrayan Himbasha is the northern version of the Ethiopian celebration bread — pan-baked, circular, decorated with geometric patterns, and fragrant with the nigella seeds that are the Tigrayan signature spice.
Ingredients
Equipment: Bowl, Large flat pan with lid
- 3 cups all-purpose flour
- 1 tsp yeast
- 2 tbsp sugar
- ½ tsp salt
- 1 tbsp oil
- 1 cup warm water
- ½ tsp nigella seeds (black cumin)
- ¼ tsp fenugreek
Method
- Dissolve yeast in water with sugar. Rest 10 minutes.
- Combine flour, salt, nigella seeds, and fenugreek.
- Add yeast mixture and oil. Knead 8 minutes.
- Rise 90 minutes.
- Press into a large round (2cm thick). Score decorative pattern.
- Cook in a flat pan covered on medium-low: 20 minutes per side.
Chef Tips
- Nigella seeds are the Tigrayan Himbasha signature — do not substitute.
- The decorative pattern is as important as the flavour.
Common Mistakes to Avoid
- Omitting nigella seeds — makes it Ambasha, not Himbasha.
