🍞 Ethiopian Sweet Ambasha

Ethiopian Sweet Ambasha — the celebration version of Ambasha (ETH005) made with additional honey, more sugar, and enriched with egg. Deeper golden, more fragrant with cardamom, and decorated with the intricate geometric pattern — served as the dessert bread at the most important celebrations.
Sweet Ambasha is the dessert version of the everyday Ambasha — made more indulgent with egg, more honey, and a more generous hand with cardamom. It occupies the space between bread and cake, eaten as dessert at celebrations.
Ingredients
Equipment: Bowl, Large flat pan with lid or oven at 175°C
- 3 cups all-purpose flour
- 1 tsp yeast
- 4 tbsp honey
- 3 tbsp sugar
- 1 egg
- ½ tsp salt
- 1 tsp ground cardamom
- ½ tsp ground fenugreek
- ¼ tsp ground cinnamon
- 1 cup warm water
- 3 tbsp oil
Honey glaze: 2 tbsp honey + 1 tsp water
Method
- Dissolve yeast in warm water with 1 tsp honey. Rest 10 minutes.
- Beat egg with remaining honey, sugar, and oil.
- Combine flour, salt, cardamom, fenugreek, and cinnamon.
- Add yeast mixture and egg mixture to flour. Knead 8 minutes.
- Cover. Rise 90 minutes until doubled.
- Press into a large round 2cm thick.
- Brush with egg wash.
- Press deep geometric patterns into the surface.
- Pan method: cook covered on medium-low 20 minutes per side.
- Or oven: bake at 175°C for 35—40 minutes.
- Brush with honey glaze immediately out of the pan/oven.
Chef Tips
- Egg enrichment makes the crumb more tender than standard Ambasha.
- More honey than the standard version — the bread should taste noticeably sweet.
- The honey glaze gives a beautiful glossy finish.

- Too high heat — the honey content burns easily.
