Ingredients
Equipment: Heavy pot
- 600g beef — cubed
- 1 cup strong brewed Jimma coffee
- 2 onions
- 4 garlic cloves
- 1 tbsp ginger
- 2 tbsp berbere
- 2 tbsp kibbeh
- 1 tbsp honey
- 1 tsp salt
Method
- Dry caramelise onions 18 minutes.
- Add kibbeh and berbere. Fry 3 minutes.
- Add garlic and ginger.
- Add beef. Stir to coat.
- Add brewed coffee and honey.
- Simmer covered 45 minutes.
- The coffee evaporates into the sauce — rich, deep, complex.
- Season.

- Weak coffee — no flavour impact.
The Science
Coffee contains chlorogenic acids, melanoidins, and hundreds of aromatic compounds — when used as a braising liquid, these compounds concentrate into the sauce. The chlorogenic acids act as natural tenderisers (mild acidity), while the melanoidins add deep brown colour.
