Ethiopian coffee cheesecake is the Addis Ababa café's signature dessert — the globally beloved cheesecake format made completely Ethiopian by using Yirgacheffe espresso, Ethiopian mountain honey, and a Dabo Kolo (traditional crunchy bread) crumb base.
Ingredients
Equipment: 20cm springform tin, Oven at 160°C (bain marie)
Dabo Kolo Crumb Base
- 150g Dabo Kolo — crushed
- 50g butter — melted
Coffee Cheesecake Filling
- 500g cream cheese — room temperature
- 3 eggs
- 100g Ethiopian honey
- 2 tbsp strong Yirgacheffe espresso
- 1 tsp ground cardamom
- 1 tsp vanilla extract
Method
- Mix crushed Dabo Kolo with melted butter. Press into lined springform tin. Chill.
- Beat cream cheese until smooth.
- Add honey, eggs one at a time, espresso, cardamom, and vanilla.
- Beat until completely smooth.
- Pour over Dabo Kolo base.
- Bake in a bain marie at 160°C for 55—60 minutes.
- Centre should be barely set — slight wobble is correct.
- Cool in oven 1 hour (door ajar). Refrigerate 4 hours minimum.

- Bain marie is essential — prevents cracking.
- Yirgacheffe espresso should be strong — 2 tbsp brewed at espresso concentration.

Cheesecake sets through egg protein coagulation — at 160°C in a bain marie, the water bath limits maximum temperature to 100°C, ensuring gentle, even setting. The slight wobble at removal means the residual heat will complete the setting during cooling.
