Ingredients

Equipment: 20cm springform tin, Oven at 160°C (bain marie)

    Dabo Kolo Crumb Base

    • 150g Dabo Kolo — crushed
    • 50g butter — melted

    Coffee Cheesecake Filling

    • 500g cream cheese — room temperature
    • 3 eggs
    • 100g Ethiopian honey
    • 2 tbsp strong Yirgacheffe espresso
    • 1 tsp ground cardamom
    • 1 tsp vanilla extract

    Method

    1. Mix crushed Dabo Kolo with melted butter. Press into lined springform tin. Chill.
    2. Beat cream cheese until smooth.
    3. Add honey, eggs one at a time, espresso, cardamom, and vanilla.
    4. Beat until completely smooth.
    5. Pour over Dabo Kolo base.
    6. Bake in a bain marie at 160°C for 55—60 minutes.
    7. Centre should be barely set — slight wobble is correct.
    8. Cool in oven 1 hour (door ajar). Refrigerate 4 hours minimum.
