Kenyan Lamb Chops — rack chops marinated in garlic, ginger, lemon, and spices then grilled or pan-seared until perfectly crusted outside and juicy within. A restaurant favourite and celebration centrepiece across Kenya.
Lamb chops are Kenya's premium grilled meat — quick to cook, visually impressive, and deeply satisfying. Marinated in a simple Kenyan spice blend and grilled to medium-done, they deliver a richness and elegance that makes them the centrepiece of any celebration plate or restaurant spread.
Ingredients
Equipment: Grill or large frying pan, Tongs, Mixing bowl
- 8 lamb chops — about 1.2 kg
- 4 garlic cloves — minced
- 1 tbsp fresh ginger — grated
- 2 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper — optional
- 2 tbsp fresh rosemary or thyme — optional
Method
- Mix garlic, ginger, lemon juice, oil, and all spices into a marinade.
- Coat the lamb chops thoroughly. Marinate for 1 hour at room temperature or up to 12 hours in the refrigerator.
- If pan-searing: heat a heavy pan (cast iron ideal) over high heat until very hot. Sear chops for 3—4 minutes per side for medium-done.
- If grilling: cook over medium-high charcoal or gas for 4—5 minutes per side.
- Rest for 5 minutes before serving — this is essential for juicy chops.
- Serve with kachumbari and fresh lemon wedges.

- Bring chops to room temperature before cooking — cold meat going into a hot pan cooks unevenly.
- A hot pan or grill is essential — it creates the crust that seals in the juices.
- Rest after cooking is non-negotiable — cutting too soon loses all the juices.
- For medium-done, the internal temperature should reach 63°C.
Common Mistakes to Avoid
- Cold meat in hot pan — uneven cooking.
- Not resting after cooking — dry, tough chops.
- Overcooking — lamb chops are best medium to medium-done, not well done.
The Science
Lamb chops cook quickly because they are thin. The high initial heat creates a Maillard crust that seals flavour. Resting allows the heat to redistribute throughout the chop and the muscle fibres to relax, reabsorbing the juices that were pushed to the centre during cooking.
