Ingredients

Equipment: 3 shallow bowls (for flour, egg, breadcrumbs), Deep frying pan, Tongs

  • 600g tilapia or white fish fillets — cut into finger-sized strips
  • 2 garlic cloves — minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp turmeric
  • 2 eggs — beaten
  • 1 cup breadcrumbs
  • 2 tbsp plain flour
  • Vegetable oil — for frying

Method

  1. Mix garlic, lemon juice, paprika, cumin, turmeric, salt, and pepper. Toss the fish strips in this seasoning.
  2. Mix the paprika and cumin into the breadcrumbs for a flavoured coating.
  3. Set up a coating station: flour in bowl 1, beaten egg in bowl 2, spiced breadcrumbs in bowl 3.
  4. Coat each fish strip: flour first, then egg, then breadcrumbs. Press gently to adhere.
  5. Heat oil to 175°C.
  6. Fry in batches for 3—4 minutes until deep golden brown, turning once.
  7. Drain on paper towels. Serve immediately.
