🥥 Kenyan Coconut Cassava Bites
Mihogo ya Nazi
Kenyan Coconut Cassava Bites — cubes of boiled cassava coated in a sweet, fragrant coconut and sugar mixture with cardamom. A simple coastal Swahili treat that transforms humble cassava into something indulgent and aromatic.
Coconut cassava bites are a coastal Kenyan treat that perfectly illustrates the Swahili instinct to improve anything with coconut. Boiled cassava cubes are rolled in a mixture of grated coconut, sugar, and cardamom while still warm — the coconut adheres and the whole thing becomes fragrant, slightly chewy, and deeply satisfying.
Ingredients
Equipment: Large saucepan, Mixing bowl
- 600g cassava — peeled, boiled until tender, and cut into bite-sized cubes
- 1 cup desiccated or freshly grated coconut
- 3 tbsp sugar
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- Pinch of salt
Method
- Peel and boil cassava as per KEN035. Cut into bite-sized cubes while warm.
- Mix coconut, sugar, cardamom, cinnamon, and salt in a bowl.
- While the cassava is still warm, roll each piece in the coconut mixture.
- Press the coating gently to adhere.
- Arrange on a plate. Serve warm or at room temperature.
Chef Tips
- Coat the cassava while it is still warm — the warmth helps the coconut mixture adhere.
- Freshly grated coconut gives a more moist, fragrant result than desiccated.
- A tiny drizzle of condensed milk over the coated pieces adds extra sweetness and helps the coating stick.
Common Mistakes to Avoid
- Coating cold cassava — the mixture does not adhere well.
- Overcooking cassava — it falls apart when coated.
The Science
Warm cassava releases surface starch that acts as a natural adhesive for the coconut coating. The warmth also slightly softens the coconut, creating a better texture integration than coating cold cassava.
