Wedding pilau is the ultimate expression of the pilau tradition — made on a scale that requires multiple cooks, enormous sufurias, and a full day of preparation. The wedding pilau cook (often a renowned local cook hired specifically for the occasion) is one of the most important wedding vendors in Kenya. This recipe scales to 20 portions — a small wedding batch.
Ingredients
Equipment: Extra-large sufuria (10L+), Spice grinder, Long wooden spoon
- 3 kg best-quality beef — cubed
- 10 cups basmati rice — washed and soaked
- 4 large onions — thinly sliced
- 12 garlic cloves — minced
- 4 tbsp ginger — grated
- 6 large tomatoes — diced
- 8 tbsp vegetable oil
- 20 cups beef stock
- 4 tsp salt
- ½ cup fresh coriander
Whole spices
- 4 tsp cumin seeds
- 16 cardamom pods
- 4 cinnamon sticks
- 16 whole cloves
- 2 tsp black peppercorns
- 4 star anise
- 2 tsp coriander seeds
Method
- Toast all spices in a dry pan until deeply fragrant. Grind half, keep half whole.
- In the large sufuria, heat oil until very hot. Brown beef in large batches.
- Cook onions until deeply golden — 15 minutes for this quantity.
- Add garlic, ginger, spices, and tomatoes. Cook 10 minutes until very thick.
- Return all beef. Add stock. Simmer covered for 45—50 minutes.
- Drain soaked rice. Add to pot. Stir gently.
- Bring to a boil, reduce to lowest heat, cover tightly with lid and a cloth.
- Steam for 20—25 minutes.
- Rest 15 minutes. Fold gently. Garnish generously with coriander.

- For wedding scale, prepare the spice blend and cook the beef the day before — assemble with rice on the day.
- The cloth under the lid absorbs excess steam and prevents the rice from becoming too wet — the wedding cook's secret.
- Taste and adjust salt after the beef step and again after the rice is cooked.
