Ingredients
Equipment: Large heavy pot with tight lid, Small pan for garnish
- 4 cups basmati rice — washed and soaked 30 minutes
- 800ml thick coconut milk
- 3 cups water
- 2 tsp salt
- 1 tbsp butter or coconut oil

- ½ cup desiccated coconut — dry-toasted until golden
- 2 shallots — thinly sliced and fried until crispy
- ½ tsp rose water — optional
Method
- Drain soaked rice.
- Combine coconut milk, water, salt, and butter in a large pot. Bring to a boil.
- Add rice. Stir once. Return to a boil.
- Reduce to the lowest possible heat. Cover tightly.
- Cook for 18—20 minutes without lifting the lid.
- Remove from heat. Rest covered for 10 minutes.
- Fluff gently. Transfer to serving platter.
- Top with toasted coconut, crispy shallots, and a dash of rose water if using.
