Honey roast chicken occupies the sweet spot in Kenyan celebration cooking — more impressive than everyday chicken but accessible enough for family birthday celebrations, school prize-giving dinners, and Sunday family gatherings. The Kenyan honey marinade applied and reapplied during roasting builds a deeply caramelised, fragrant crust that is simultaneously sweet, garlicky, and smoky.
Ingredients
Equipment: Roasting tin, Oven (190°C), Basting brush
- 1 whole chicken (1.5—1.8 kg)
- 5 tbsp raw Kenyan honey
- 5 garlic cloves — minced to paste
- 1 tbsp ginger — grated
- 2 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp cumin
- 2 tsp salt
- ½ tsp black pepper
- ½ cup fresh coriander — for stuffing
Method
- Score the chicken deeply — legs, thighs, and breast, cutting to the bone.
- Combine honey, garlic, ginger, lemon, oil, spices, salt, and pepper into a thick marinade.
- Rub the marinade all over the chicken and deep into the scores.
- Stuff the cavity with fresh coriander.
- Marinate for 4 hours minimum — overnight preferred.
- Preheat oven to 190°C.
- Place chicken in roasting tin. Roast for 30 minutes.
- Baste generously with pan juices and any remaining marinade.
- Roast for another 30—40 minutes, basting every 15 minutes.
- The chicken is done when a skewer in the thigh runs clear.
- Rest 10 minutes before carving.
