Ingredients
Equipment: Mixing bowl, Grill or oven, Basting brush, Tongs
- 1 kg chicken pieces — bone-in, skin-on
- 3 tbsp honey
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 1 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp fresh coriander — for garnish
Method
- Score the chicken pieces deeply.
- Mix honey, garlic, ginger, soy sauce, lemon juice, oil, paprika, cumin, salt, and pepper into a marinade.
- Coat the chicken thoroughly. Marinate for 1 hour minimum.
- Grill method: cook over medium charcoal or gas for 12—15 minutes per side. Baste with remaining marinade every 5 minutes during the last 15 minutes.
- Oven method: roast at 200°C for 30—35 minutes, basting every 10 minutes.
- The glaze is ready when it is sticky, caramelised, and deeply golden — watch carefully in the last 5 minutes to prevent burning.
- Rest 5 minutes, garnish with coriander, and serve.
