Ingredients
Equipment: Sandwich press or heavy pan, Knife
- 2 panini rolls or ciabatta
- 300g chicken breast — grilled with curry spices
- 4 slices mozzarella or cheddar
- 1 small onion — caramelised
- 2 tbsp pili pili mayo (mayo + pili pili sauce)
- 2 slices tomato
- Butter for pressing
Method
- Grill chicken breast with curry powder, paprika, and salt until cooked. Slice thinly.
- Caramelise onion: cook slowly in butter until golden and sweet — 15 minutes.
- Mix mayo with pili pili sauce.
- Split panini rolls. Spread pili pili mayo on both sides.
- Layer: chicken, cheese, caramelised onion, tomato.
- Press in sandwich press for 4—5 minutes until golden and cheese is melted.
- Or: brush outside with butter and press in a heavy pan, weighted, for 3 minutes per side.
