Kenya produces extraordinary tropical fruit — the mango season, the pineapple from the coast, the passion fruit from the highlands, the papaya from warm valleys. A bowl of these fruits at their seasonal best needs almost nothing added. Lime juice, a few mint leaves, and the quality of the fruit does all the work.
Ingredients
Equipment: Sharp knife, Bowl
- 1 large ripe mango — peeled and sliced
- 1 cup fresh pineapple — cubed
- 3 passion fruits — halved
- ½ small papaya — seeded and sliced
- 1 cup watermelon — cubed
- 2 tbsp lime juice
- 1 tbsp honey — optional
- Fresh mint leaves — generous
- Pinch of chilli powder — optional for contrast

The Science
