🥑 Kenyan Avocado Shake
Shake ya Parachichi
Kenyan Avocado Shake — two whole ripe Kenyan avocados blended with cold milk, honey, and a squeeze of lime into a rich, impossibly creamy, pale green shake. The shake that astonishes newcomers to Kenyan café culture — richer than any dairy milkshake, lighter than any dessert.
The avocado shake is one of the most distinctive things you can drink in a Kenyan café. Thick, pale green, and unbelievably creamy, it is a shake made entirely from fruit fat rather than dairy fat — and the result is something the world outside Kenya has not yet fully discovered. For Kenyans, it is completely normal. For visitors, it is a revelation.
Ingredients
Equipment: Blender, Tall glasses
- 2 large ripe Kenyan avocados
- 2 cups cold whole milk
- 3 tbsp honey
- 2 tbsp lime juice
- ½ tsp vanilla extract
- Pinch of salt
- Ice — 6 cubes
Method
- Scoop avocado flesh into the blender.
- Add cold milk, honey, lime juice, vanilla, salt, and ice.
- Blend on high speed for 45—60 seconds until completely smooth and creamy.
- Taste and adjust honey and lime.
- Pour into tall glasses.
- Serve immediately — avocado discolours quickly.
Chef Tips
- Drink immediately — avocado oxidises and browns quickly after blending.
- The lime juice slows browning slightly and adds essential acidity.
- Kenyan avocados — large, buttery, and rich — make this incomparably better than imported varieties.
Common Mistakes to Avoid
- Not drinking immediately — turns brown.
- Under-ripe avocado — lacking creaminess.
The Science
See KEN138 for avocado fat composition science. In shake form, the avocado fat droplets are emulsified by high-speed blending with milk, creating a stable, ultra-fine emulsion with exceptional mouthfeel — the same mechanism that makes avocado-based dressings and dips so creamy.
