🥥 Kenyan Coconut Milkshake
Milkshake ya Nazi
Kenyan Coconut Milkshake — thick coconut cream blended with vanilla ice cream, toasted coconut, and a touch of cardamom. Rich, fragrant, and tropical — the Swahili coast in a glass.
The Kenyan coconut milkshake draws on the coastal love of coconut to create the richest, most fragrant milkshake in the café repertoire. The toasted coconut garnish and cardamom are the coastal signatures.
Ingredients
Equipment: Blender, Tall glasses
- 400ml thick coconut cream
- 4 scoops vanilla ice cream
- 2 tbsp toasted desiccated coconut
- ¼ tsp ground cardamom
- 2 tbsp honey
- ½ tsp vanilla extract
- Ice — 6 cubes
- Whipped cream and toasted coconut — for topping
Method
- Toast desiccated coconut in a dry pan until golden. Cool.
- Blend coconut cream, ice cream, honey, cardamom, vanilla, and ice until smooth.
- Pour into tall glasses.
- Top with whipped cream and toasted coconut.
- Serve immediately.
Chef Tips
- Thick coconut cream gives a richer result than coconut milk.
- The cardamom is the coastal Kenyan signature — do not skip it.
- Toast the coconut fresh for maximum crunch.
Common Mistakes to Avoid
- Using thin coconut milk — insufficient richness.
- Untoasted coconut garnish.
The Science
Coconut cream has a higher fat content (20—25%) than coconut milk (10—15%). The higher fat content creates a richer, more stable emulsion when blended with ice cream — producing a thicker shake with more body.
