Method

  4. Heat pan over high heat. Add oil.
  5. Place salmon skin-side down. Press lightly for 30 seconds.
  6. Cook without moving 4—5 minutes until skin is crispy and opaque halfway up the fillet.
  7. Flip. Cook 2—3 minutes for medium (still blushing in the centre).
  8. Rest 2 minutes. Plate and spoon beurre blanc alongside.
