Ingredients

  • 300g sponge fingers (savoiardi)

Espresso Soak

  • 2 cups strong Kenyan espresso — cooled
  • 2 tbsp sugar

Mascarpone Cream

  • 500g mascarpone
  • 4 egg yolks
  • 120g icing sugar
  • 300ml whipping cream
  • 1 tsp vanilla

Dusting

  • Cocoa powder
  • Dark chocolate shavings

Method

  1. Mix cooled espresso and sugar in a shallow bowl.
  2. Beat egg yolks and icing sugar until pale and thick.
  3. Fold in mascarpone and vanilla until smooth.
  4. Whip cream to soft peaks. Fold into mascarpone mixture.
  5. Dip each sponge finger briefly in coffee — 2 seconds each side. Do not soak.
  6. Layer: dipped sponge fingers, mascarpone cream, sponge fingers, mascarpone cream.
  7. Dust top generously with cocoa powder.
  8. Refrigerate at least 4 hours — overnight is ideal.
  9. Add chocolate shavings before serving.
