Ingredients
Equipment: 4 ramekins or individual cake moulds, Bowl, Oven (180°C), Electric beater
- 150g dark chocolate (70%+) — chopped
- 100g butter
- 3 eggs
- 3 egg yolks
- 100g icing sugar
- 50g all-purpose flour
- 1 tsp strong Kenyan espresso
To serve
- Passion fruit coulis (from 4 passion fruits blended with 1 tbsp honey)
- Vanilla ice cream
- Cocoa powder for dusting
Method
- Butter and cocoa-dust the ramekins. Refrigerate.
- Melt chocolate and butter together over a bain-marie. Stir until smooth. Cool slightly.
- Beat eggs, yolks, and icing sugar until pale and ribbon-like — 4 minutes.
- Fold chocolate into the egg mixture.
- Fold in flour and espresso.
- Divide into ramekins. Refrigerate until needed (up to 24 hours).
- Preheat oven to 180°C.
- Bake from refrigerated for exactly 11—12 minutes — the edges should be set, the centre should wobble.
- Rest 1 minute. Invert onto plates. Dust with cocoa.
- Serve with passion fruit coulis and ice cream.
