The tropical pavlova is the hotel restaurant dessert that creates the most excitement — the enormous crispy meringue dome, crowned with whipped cream and glistening with fresh tropical fruit, arrives at the table and stops conversation. Kenya's fruits make this version incomparably better than any other.

Ingredients

Equipment: Electric beater, Lined baking tray, Oven (120°C)

    Meringue

    • 6 egg whites (at room temperature)
    • 300g caster sugar
    • 1 tsp white vinegar
    • 1 tsp cornstarch
    • 1 tsp vanilla

    Topping

    • 400ml coconut cream — whipped
    • 2 tbsp icing sugar
    • Passion fruit curd (from KEN283 recipe)

    Tropical Fruit Mosaic

    • 1 mango — sliced
    • 2 kiwis — sliced
    • 1 cup strawberries
    • 3 passion fruits — pulp
    • ½ cup pineapple slices

    Method

    1. Preheat oven to 120°C. Draw a 24cm circle on parchment. Flip parchment over.
    2. Whisk egg whites to stiff peaks. Gradually add sugar one tablespoon at a time, whisking until glossy and thick — 10—12 minutes.
    3. Fold in vinegar, cornstarch, and vanilla.
    4. Spoon onto circle. Create a slight indentation in the centre and taller edges.
    5. Bake 90 minutes until crispy outside and dry. Turn oven off. Leave to cool inside oven — minimum 2 hours.
    6. Whip coconut cream with icing sugar to soft peaks.
    7. Top pavlova with coconut cream, passion fruit curd, and arranged tropical fruit.
    8. Serve immediately — pavlova softens when refrigerated.

    • Egg whites must be at room temperature — cold whites do not whip to maximum volume.
    • Add sugar one tablespoon at a time — adding too quickly produces a grainy, unstable meringue.
