Kenyan Tropical Fruit Tart — a buttery sweet pastry shell filled with a silky passion fruit crème pâtissière and decorated with a mosaic of fresh Kenyan tropical fruits. The most visually spectacular dessert in the Kenyan bakery and hotel repertoire.
The tropical fruit tart is the dessert that stops people in their tracks at the hotel display counter — the mosaic of sliced mango, passion fruit, kiwi, strawberry, and pineapple arranged on a golden pastry shell filled with pale yellow passion fruit cream is extraordinarily beautiful.
Ingredients
Equipment: 23cm tart tin with removable base, Baking beans, Saucepan, Pastry brush
Sweet Pastry
- 200g all-purpose flour
- 100g cold butter — cubed
- 50g icing sugar
- 1 egg yolk
- 2 tbsp cold water
Passion Fruit Crème Pâtissière
- 4 egg yolks
- 80g sugar
- 30g cornstarch
- 400ml milk
- 4 passion fruits — juice
- 30g butter
- 1 tsp vanilla
Decoration
- 1 mango — sliced
- 1 kiwi — sliced
- ½ cup strawberries — halved
- ½ cup pineapple — sliced thin
- 2 passion fruits — seeds and pulp
- Apricot jam — for glaze
Method
- Make pastry: rub butter into flour and sugar. Add yolk and water. Press into a disc. Refrigerate 30 minutes.
- Roll and line the tart tin. Prick base. Refrigerate 30 minutes.
- Blind bake with baking beans at 180°C for 15 minutes. Remove beans. Bake 10 more minutes until golden. Cool.
- Make crème pât: whisk yolks, sugar, and cornstarch. Heat milk to nearly boiling. Pour over egg mixture while whisking. Return to heat. Stir constantly until thick. Add passion fruit juice, butter, and vanilla. Press plastic wrap on surface. Cool.
- Fill cooled tart shell with passion fruit cream.
- Arrange fruit in a beautiful mosaic pattern.
- Heat apricot jam with a little water. Brush over fruit for a glaze.

- The blind bake is essential for a crispy pastry base — skip it and the base is soggy.
- Press cling wrap directly on the cream to prevent a skin forming.

The Science
Blind baking dries the pastry base before the wet filling is added. Without this step, the moisture from the crème pâtissière soaks into the unbaked pastry during assembly, creating a soggy, underbaked base.
