Ingredients

    • 300g digestive biscuits — crushed
    • 150g butter — melted

    • 300ml whipping cream
    • 150g icing sugar
    • 3 tsp gelatin dissolved in 3 tbsp water

    Passion Fruit Flavouring

    • ½ cup passion fruit juice

    Mango Flavouring

    • ½ cup mango puree

    Coffee Flavouring

    • 3 tbsp strong Kenyan espresso

    Toppings

    • Passion fruit pulp
    • Mango coulis
    • Cocoa powder

    Method

    1. Divide biscuit mixture into 12 small ring moulds. Press firmly. Refrigerate.
    2. Beat cream cheese and sugar. Whip cream to soft peaks. Fold together with dissolved gelatin.
    3. Divide cream cheese mixture into three equal portions.
    4. Flavour each: passion fruit, mango, or coffee. Mix well.
    5. Spoon into the prepared moulds — 4 of each flavour.
    6. Refrigerate overnight.
    7. To serve: push out of moulds. Top passion fruit with pulp, mango with coulis, coffee with cocoa.
    8. Arrange three on each plate.
