The cheesecake trio is the hotel restaurant's way of celebrating Kenya's greatest flavours simultaneously — passion fruit, mango, and coffee, each in a mini cheesecake, each representing something extraordinary about what this country produces. Served side by side on one plate, it is both beautiful and delicious.
Ingredients
Equipment: 12 individual ring moulds or ramekins, Electric beater
Shared Base (for all three)
- 300g digestive biscuits — crushed
- 150g butter — melted
Shared Cream Cheese Base
- 750g cream cheese — softened
- 300ml whipping cream
- 150g icing sugar
- 3 tsp gelatin dissolved in 3 tbsp water
Passion Fruit Flavouring
- ½ cup passion fruit juice
Mango Flavouring
- ½ cup mango puree
Coffee Flavouring
- 3 tbsp strong Kenyan espresso
Toppings
- Passion fruit pulp
- Mango coulis
- Cocoa powder
Method
- Divide biscuit mixture into 12 small ring moulds. Press firmly. Refrigerate.
- Beat cream cheese and sugar. Whip cream to soft peaks. Fold together with dissolved gelatin.
- Divide cream cheese mixture into three equal portions.
- Flavour each: passion fruit, mango, or coffee. Mix well.
- Spoon into the prepared moulds — 4 of each flavour.
- Refrigerate overnight.
- To serve: push out of moulds. Top passion fruit with pulp, mango with coulis, coffee with cocoa.
- Arrange three on each plate.

- Make the night before — the flavours develop beautifully overnight.
- Line moulds with acetate strips for perfect release.
- Arrange on the plate with deliberate colour contrast — orange, yellow, brown.

- Not enough gelatin — collapses when unmoulded.
