Ingredients

    Base

    • 250g digestive biscuits — crushed
    • 120g butter — melted

    Mango Filling

    • 500g cream cheese — room temperature
    • 1 cup fresh mango puree — from 2 large ripe mangoes
    • 200ml whipping cream
    • 4 tbsp sugar
    • 2 tsp gelatin dissolved in 3 tbsp warm water
    • 1 tsp vanilla
    • 1 tbsp lime juice

    Mango Topping

    • 1 cup mango puree
    • 1 tsp agar agar
    • 1 tbsp sugar
    • Fresh mango slices for decoration

    Method

    1. Make base: crush biscuits, mix with melted butter, press into tin. Refrigerate.
    2. Make mango filling: blend mango puree until smooth. Beat cream cheese and sugar until smooth.
    3. Fold in mango puree, lime juice, dissolved gelatin, and vanilla.
    4. Whip cream to soft peaks. Fold into mango cream cheese mixture.
    5. Pour over base. Refrigerate 4 hours.
    6. Make mango topping: heat mango puree with agar agar and sugar until dissolved. Cool to room temperature.
    7. Pour gently over set cheesecake. Refrigerate 1 hour.
    8. Decorate with fresh mango slices.
