Ingredients
Equipment: 20cm springform tin, Electric beater, Small saucepan
Base
- 250g digestive biscuits — crushed
- 120g butter — melted
Filling
- 500g cream cheese — room temperature
- 200ml whipping cream
- 4 tbsp sugar
- 1 tsp vanilla extract
- 2 tsp gelatin dissolved in 3 tbsp warm water — or 2 tsp agar agar
Passion Fruit Topping
- ½ cup passion fruit pulp — from about 8 passion fruits
- 3 egg yolks
- 4 tbsp sugar
- 60g butter
Method
- Make base: mix crushed biscuits with melted butter. Press firmly into the tin base. Refrigerate 20 minutes.
- Make passion fruit curd: whisk passion fruit, egg yolks, and sugar in a saucepan over low heat until thick — 8—10 minutes. Remove. Whisk in butter. Cool completely.
- Make filling: beat cream cheese and sugar until smooth. Add vanilla and dissolved gelatin.
- In a separate bowl, whip cream to soft peaks. Fold into cream cheese mixture.
- Pour filling over biscuit base. Smooth the top.
- Refrigerate for 4 hours until fully set.
- Spread passion fruit curd over the set cheesecake.
- Refrigerate 1 more hour. Unmould and serve.
