- Salt and white pepper
Accompaniments

Method
- Make garlic butter: melt butter with garlic. Cook 1 minute.
- Add prawns. Cook 2—3 minutes until pink. Add coriander and lemon. Remove.
- Soft scramble eggs: melt butter in non-stick pan. Add beaten eggs, cream, salt, and pepper. Stir constantly over low heat until just set but still glossy. Remove from heat — the residual heat finishes them.
- Slice smoked fish.
- Slice avocado.
- Arrange everything on a warm plate.
- Serve with mango juice and toasted sourdough.
