Biriani in Zanzibar is not just a dish — it is an event. The layering, the saffron, the fried onions, the cashews, the sealed dum cooking — every step requires skill and attention. Zanzibar biriani is made for weddings, for the celebration after Eid prayers, and for the most important family occasions.

Ingredients

Equipment: Large dum pot, Foil or dough seal, Heat diffuser

  • 1 kg beef — cubed and marinated overnight in 1 cup yogurt, 5 garlic cloves, 2 tbsp ginger, 2 tsp garam masala, 1 tsp turmeric, 2 tsp paprika, 2 tsp salt
  • 5 cups basmati rice — parboiled to 70% done
  • 3 onions — fried until deep golden
  • ½ cup cashews — fried golden
  • ½ cup raisins
  • ½ tsp saffron — soaked in 4 tbsp warm milk
  • 4 tbsp ghee

Dum seal

  • Foil or dough

Method

  1. Cook marinated beef in ghee until 85% cooked — 35—40 minutes.
  2. Parboil rice with whole spices (cardamom, cloves, bay leaves) to 70% doneness. Drain.
  3. Layer in dum pot: beef, half rice, half fried onions, cashews, raisins, remaining rice, saffron milk, remaining ghee and onions.
  4. Seal pot tightly with foil or dough.
  5. Cook over very low heat with heat diffuser for 30 minutes.
  6. Serve in layers — preserve colour variation.

  • 70% parboiled rice is essential — never fully cooked or it becomes mushy.
  • The dum seal traps all fragrance inside — never lift during cooking.
  • Saffron soaked in warm milk is the visual and aromatic signature of Zanzibar biriani.
