Whole roast chicken with a Tanzanian spice marinade is the celebration dish of urban Tanzania's restaurants and homes — more impressive than jointed pieces, more flavourful from the whole-bird roasting, and visually spectacular when brought to the table.

Ingredients

Equipment: Roasting tin, Oven at 190°C

  • 1 whole chicken (1.5—1.8 kg)
  • 5 garlic cloves — minced
  • 2 tbsp ginger
  • 3 tbsp honey
  • 2 tbsp lemon juice
  • 3 tbsp oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp turmeric
  • 2 tsp salt

Method

  1. Score chicken all over. Mix marinade. Rub into scores and under skin.
  2. Marinate 4 hours minimum.
  3. Preheat oven to 190°C.
  4. Roast 40 minutes. Baste with pan juices.
  5. Continue roasting 35—40 minutes, basting every 15 minutes.
  6. Rest 10 minutes before carving.
