🍢 Tanzanian Chicken Tikka
Kuku Tikka
Tanzanian Kuku Tikka — chicken pieces marinated in a rich yogurt-spice mixture with Zanzibar spices and lemon, grilled over charcoal or in a tandoor-style oven until perfectly charred and deeply fragrant. The Indian Ocean restaurant favourite.
Chicken tikka arrived on the Tanzanian coast through the Indian trading communities that have been part of East African life for centuries. The Tanzanian version uses local spices alongside the yogurt marinade — the result is distinctly East African rather than purely Indian.
Ingredients
Equipment: Skewers, Grill or oven at 220°C
- 600g chicken thighs — boneless, cubed
Tikka Marinade
- ½ cup natural yogurt
- 4 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp lemon juice
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chilli powder
- 2 tsp salt
- 2 tbsp oil
Method
- Mix all marinade ingredients. Coat chicken thoroughly.
- Marinate minimum 4 hours — overnight preferred.
- Thread on skewers.
- Grill over high coals 4—5 minutes per side until charred and cooked through. Or oven-grill at 220°C for 18—20 minutes.
- Serve with lemon wedges and mint chutney.
Chef Tips
- Overnight marination produces dramatically more flavour.
- The yogurt tenderises the chicken — do not marinate beyond 24 hours.
- High heat for tikka — the char is essential.
Common Mistakes to Avoid
- Short marination.
- Low heat — no char.
The Science
Yogurt contains lactic acid and proteolytic enzymes that break down muscle proteins, tenderising the chicken during marination. The high heat needed for the characteristic tikka char requires these proteins to be partially denatured first — the marinade makes this happen at a lower surface temperature.
