Goat coconut curry is the Swahili coast's most celebratory goat dish — the combination of slowly cooked young goat and rich coconut milk produces a sauce of extraordinary depth. It is served at weddings and major celebrations where only the best food will do.

Ingredients

Equipment: Large heavy pot

  • 1 kg young goat — bone-in
  • 2 onions — diced
  • 4 tomatoes — diced
  • 5 garlic cloves
  • 2 tbsp ginger
  • 400ml thick coconut milk
  • 3 tbsp oil
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 2 tsp salt
  • 3 cups water
  • ¼ cup coriander

Method

  1. Brown goat. Remove.
  2. Cook onions until very golden — 10 minutes.
  3. Add garlic, ginger, all spices. Stir 1 minute.
  4. Add tomatoes. Cook 10 minutes until very thick.
  5. Return goat. Add water. Simmer covered 70—80 minutes until very tender.
  6. Add coconut milk. Simmer gently 12 minutes.
  7. Garnish with coriander.

  • Young goat (mbuzi mdogo) is non-negotiable for this dish.
  • The tomato base must be very thick before adding water.
  • Coconut milk goes in only after the goat is fully tender.
