Supu ya Mbuzi is Tanzania's most restorative food — the goat soup that is given to new mothers, the sick, and those recovering from hardship. The goat bones produce a gelatinous, golden broth of extraordinary nourishment. Every traditional healer recommends it.
Ingredients
Equipment: Large pot
- 800g goat bones and pieces
- 3 litres water
- 2 onions — halved
- 3 garlic cloves
- 3 tbsp ginger — sliced
- 2 medium carrots
- 1 tsp cumin
- 1 tsp coriander
- 2 tsp salt
- ¼ cup fresh coriander
- Lemon wedges
Method
- Blanch goat pieces in boiling water 5 minutes. Drain and rinse.
- Place in pot with all vegetables, garlic, ginger, and spices.
- Cover with 3 litres cold water.
- Bring to a boil. Skim foam.
- Lowest simmer for 2 hours.
- Strain. Shred any meat. Return to broth.
- Garnish with coriander. Serve with lemon.

- Blanching produces a much clearer, cleaner broth.
- Lowest possible simmer — never boil hard.
- Lemon at the table is essential.
